Ping is the rate of reaction.
Gigabit Internet is the bandwidth.
Wide bandwidth means that you can send a lot of data at once.
It doesn't mean that the reaction is going to get faster.
So there's basically no difference.
The reason why the ping comes out low at fps is because the bandwidth is wide, so even if you send large amounts of data instantaneously, there is less delay in transmission.
So it's true that it's not exactly relevant, but it's not very relevant.
