It doesn't feel crispy like other cookies on the market, but it feels like it's tough or soft.

Why is this like that?

I think it's because you put too much water and it's too thick

If you make cookies and they have a chewy texture, it's because you used the wrong flour.
Cookies should be made of flour.
If you make it with gravitational or strong flour, it's chewy because of gluten.
