I made cabbage kimchi a few weeks ago.

Is there a reason why the kimchi is soft even though it hasn't been long?

There is nothing special different from making kimchi.

Summer cabbage is normally like that.
So in summer, it's good to make fresh kimchi instead of kimchi.
